The One about the Summer Bucket List 2013



School is about to start next week but my classes are just coming to a close.  I may not have the sand and the sun that most people enjoy during the summer but I know how to please myself.  I'm looking forward to "my" summer and do a bunch of stuff.  I'm one of those people who are scared of spending their free time just watching TV and lazing around the house so I do make a list of how to make my summer eventful.  And I was tinkering with the computer and came up with this...


As I reread my summer bucket list, I realize that #9 is really, really, really hard to do.  Hahaha!

Can't wait for summer! :)

The One About the Baked Eggs

I noticed I haven't been posting about my kitchen adventures for some time now...and I'm never NOT adventurous in the kitchen. :)  So here's one today...



I first read about Baked Eggs in Samantha Sotto's book, Before Ever After.  I have been meaning to try it but I sort of forgot all about it until I read about it in some blog.  Anyway, this dish received a two thumbs up from Hon-some and it's super easy to make.  Takes about half an hour to make. :)





Here's what you'll need:

3 cloves of garlic
1 medium onion
Italian/breakfast sausages
A can of whole tomatoes
Paprika
Cumin
Cayenne Pepper
Brown Sugar
Parsley/Basil
Eggs

(I don't measure when I cook so I hope you're comfortable eyeballing the amount of the ingredients.)

Here's what you'll need to do:

1.  Slice/crumble the sausages and fry them up.  Set aside.
2.  In the same pan, saute the onions and garlic in olive oil.
3.  Add the whole tomatoes and the sausages.  Sprinkle paprika, cumin, and cayenne pepper.  Add a teaspoon or two of brown sugar to cut the acidity of the tomatoes.
4.  Simmer until the mixture reduces slightly.
5.  When cooked, transfer the mixture to small bowls or ramekins.
6.  Break an egg on each bowl, topping the tomato mixture.
7.  Add a dash of parsley or basil (fresh or dried).
8.  Bake in the oven for 10 minutes or until eggs set.





Hon-some and I enjoyed this with some toast and it makes for a perfect light dinner or "brinner" (breakfast for dinner) which we like to have at least once a week.  We looooovvvveee breakfast food!

The One When I Attended a Knitting Class



Last May 11th, I attended a knitting class.  I mentioned in a past blog entry that knitting had been in my craft bucket list for a long time.  I happened to read about the Ricefield Collective and when they announced a knitting workshop that they were conducting with Craft MNL, I saw it as a sign to start learning how to knit.

There were just six of us in the class at the Craft MNL headquarters at The Collective which was perfect for me because that meant an almost one-on-one teaching style.  I received my knitting kit which looked like this:




I was one of the early birds (or eager beavers!) so I chatted a little with Meredith and Anna from Ricefield Collective.  They showed us samples of their lovely work:






We were taught the slip knot, how to make the stitches, how to cast on and cast off.  The best part is, they helped me learn how to knit left-handed!  I'm left-handed and there has been some crafts that have been difficult for me to learn. :(  But I'm happy Anna showed me how to knit left-handed considering that she was right-handed. :)

It's been fun learning how to knit and to this day, I still keep asking myself why it has taken me that long to learn this craft.  I'm glad our school summer break is coming up because I'm planning to devote a considerable part of my vacation to knitting!  Here's to learning a new craft -- and the motivation to improve (those tarsiers need more work)!!!

The One About Mezza Norte

Last Friday, Hon-some and I checked out Mezza Norte in its newest location in Trinoma.  We arrived really early; they had just opened up and some stalls were still being set up.











We saw the Philly Cheesesteak truck.  Didn't have that in their former site.





We were eager to try it out so we bought one to share.





It was overpriced, poorly constructed, and bland!!!  Hon-some said he's tasted better ones.


The paella was much better than the sandwich.  


But this tuyo pasta from another stall (I forget which one) was the bomb!!!  It was so good!

We got all our food for takeout because the weather was humid and we wanted to chow all the food down at home.  I'm already thinking of what to eat next time!  I saw these really good-looking hotdogs and I also want to try the Taiwanese chicken chops.  Plus, I've missed Merry Moo's salted caramel ice cream!

Weekend Tidbits: Nolita


Several weekends ago, I got to dine at Nolita in BGC with friends and had these:




 Roasted vegetables pizza


 My friend got onion rings.


Macaroni and (three) cheese!

Last weekend, I took Hon-some and his niece and nephews to try the place out.

I think Nolita's my new happy place. :)  The weekend that was.  Hope yours was just as bloated. :)
